Spicy Pear Cakes with Maple Syrup and Pecan Topping

Looking back I must confess that during Summer I did not bake a lot… A pity really, considering all the nice summer fruits like my all time favorites: berries, all kinds of! But can you blame me? Baking when it is more than 30°C outside, ehm no thanks. Everything would just run away (including me). The more I enjoy it now to be back in the kitchen and I think so far I am really making the most out of this season. I had pumpkin, chestnut and now it is time for pears!

Pear Cakes with Maple Syrup and Pecan Topping

I already incorporated some pear into my Chestnut Pear mini Pies, but now the Pear needs to be the hero. To complete the little cakes I decided to top them with some crunchy pecans and maple syrup! I also used maple syrup to sweeten the cakes and to give them a pit of a punch I added some grounded cloves. I added quite a bit and biting into these little cakes gives a subtle heat of the spice, so if you don’t like the taste of cloves too much I would suggest to add less. A little is however, highly recommended as the cakes would otherwise taste rather plain and boring I am afraid 😉 A bit of heat in the cold seasons is not such a bad thing, is it?

Looking through my cupboard I found these super cute little paper cake tins. Aren’t they cute? They are just perfect for my autumn themed cakes and have the perfect size. I somehow prefer to bake smaller cakes instead of one big one. Can you tell? 😛 It is just much easier to transport and everyone gets their own little cake, I like that! The size was just ideal for one piece of pear, just cut them in the according length if it is too long. Some cakes ended up with two pear pieces inside, lucky them.

Pear Cakes

  1. Start by creaming the butter and sugar together until pale and light
  2. Prepare all the dry ingredients in another bowl, sift everything
  3. Add one egg to the butter-sugar mixture, followed by one tablespoon of dry ingredients
  4. Add the vanilla essence
  5. Add another egg and add the rest of the dry ingredients
  6. Add the maple syrup and mix until everything is combined and smooth

  1. Mix together the chopped pecan notes, maple syrup and brown sugar

  1. Add one tablespoon of dough to the small cake tins
  2. Add one or two pears
  3. Add another small spoon full of dough
  4. Add two teaspoons of the pecan-syrup mixture
  5. Bake in the oven at 170°C (150°C fan oven) or until dark golden for about 20-25 minutes

Ingredients

Makes 10 small cakes (about 9cm long and 4cm high)

Pear Cakes

  • 120g Butter, soft
  • 120g Sugar
  • 2 Eggs
  • 140g Flour
  • 20g Starch
  • 1 Tsp Baking Powder
  • 1/4 – 1/2 Cloves, grounded
  • A pinch of Salt
  • 1 Tsp Vanilla Essence
  • 2 Tbsp Marple Syrup

Pecan and Maple Syrup Topping

  • 90g Pecan, chopped
  • 3 Tbsp Soft brown Sugar
  • 3 Tbsp Marple Syrup

    I didn’t bake much in the summer either. In fact, I barely went near a cooker at all in July!
