It is a very light sponge cake usually covered with just some simple Icing Sugar or if more sophisticated with melted chocolate. I decided to make it completely different and used frosting to pipe a wool like structure on the lamb which I think turned out quite lovely and cute. Of course you can decorate your lamb however you prefer it 🙂

So what we eat on Easter is this typical Kärnter Reindling which comes from the region where she grew up. Although it is made with sugar and raisins, we not only eat it sweet but also eat it with savory dishes like eggs and cheese. It is overall more bread like than cake like.

The preparation of the fondant ears and arms are a bit more time-consuming and although to put everything together takes a bit more time that just bake and frost normal cupcakes. But I think the end result is totally worth it to have a highlight on your Easter table 😉
