Spring has now fully approach which means that Easter is not far! In less than two weeks we will celebrate Easter and therefore I want to give you some ideas and inspirations on what you could bake for this occasion 🙂
With Easter I always bake a few very traditional recipes, and a classic Easter Lamb on the breakfast table it just a must have. It is a very light sponge cake usually covered with just some simple Icing Sugar or if more sophisticated with melted chocolate. I decided to make it completely different and used frosting to pipe a wool like structure on the lamb which I think turned out quite lovely and cute. Of course you can decorate your lamb however you prefer it 🙂
I have mentioned it before and I will mention it again. I am half Austrian and because my mum is from Austria she always baked typical Austrian dishes especially on Holidays like Easter and Christmas. So what we eat on Easter is this typical Kärnter Reindling which comes from the region where she grew up. Although it is made with sugar and raisins, we not only eat it sweet but also eat it with savory dishes like eggs and cheese. It is overall more bread like than cake like.
Easter Bunny Rolls
My more modern attempts for Easter Baking where these Easter Bunny Rolls. It is a more refined yeast dough, more smooth and moist than that for my Kärnter Reindling. These we ate as sweet bread rolls although they as well where not too sweet on themselves. If you prefer a real sweet yeast rolls, add a little more sugar. They look just so cute on the breakfast table as decoration 😉
Easter Bunny Cupcakes
As I nice treat for the Easter coffee table I made these 3D Easter Bunny Cupcakes. For the cupcakes you can make your favorite cupcake and frosting recipe. The preparation of the fondant ears and arms are a bit more time-consuming and although to put everything together takes a bit more time that just bake and frost normal cupcakes. But I think the end result is totally worth it to have a highlight on your Easter table 😉
