Hello you all 😀 I hope you had a great weekend! I for myself am happy that this week is over and hope for some quite weeks to come 😉 This weekend we spend rather quitely, making a lot of juices (my new passion) and planning our holiday to New Zealand! Our summer holiday was mostly focused to visit our families, so in the winter we want to travel for a few weeks far far away! I really cant wait. Planning holidays is almost as nice as actually going on one, don’t you agree? 😉

For the last summer days here I have one more dessert for you with cherries! I could get my hands on some more cherries and decided to make a little dessert with them. I used an almond batter, quick and easy! Not too sweet, but just perfect after a nice dinner (or just in between like we did to be honest…). They are best served still warm, maybe with some vanilla ice cream or custard? But I also enjoyed some of them cold the next day.

I used about 15 cherries per dish, just look for yourself how many cherries fit in your oven dish and adapt the amount of cherries if needed. I sprinkled some brown sugar on top to create a sugary crust and even topped them with some additional icing sugar! Feel free to leave the last step, the bakes are not too sweet by themselves so they can have a little more sugar on the top 😉

  1. 100g Almonds, ground
  2. 280g Sugar
  3. 1 Tsp Vanilla Paste
  4. 1 Tsp Lemon Zest
  5. 100g Butter, melted
  6. 2 Eggs
  7. 90 Cherries, pitted
  8. some brown sugar to sprinkle
  9. some icing sugar to dust
  1. Melt the butter and let it slightly cool down
  2. Pit the cherries (I used a straw. and add about 15 to each dish
  3. Mix the batter by adding all the ingredients and pour it over the cherries
  4. Add about 1-2 tablespoons of brown sugar on the top
  5. Bake the desserts in an 160°C oven for about 20 minutes
  6. Dust with some additional icing sugar and enjoy them while still warm
