Apple Rose Tart

My parents were visiting this weekend, so obviously I was baking some nice cake for them 🙂 I decided to go for a simple apple pie as we all love apple pies! But simple just won’t do it for me, so I found this great idea in one of my favorite magazines about an apple pie with the apples looking like little roses. I thought that this was the perfect cake for my parents and immediately started baking it!

The cake itself is a simple shortcrust pastry, but to be honest this time I really struggled with it as it was just falling apart being way to crumbly. I found a really great tip to get a smooth pastry dough which I will happily share with you here:

TIP: When your pastry dough is too crumbly, just add a 1/2 -1 tablespoon of sour cream! It really worked like a charm and the dough turned out fantastic! 

Apple Rose Pie

I have made a frangipane to cover the shortcrust pastry and then started to peal the apples in small long stripes…  Well, in the beginning I was a bit disappointed as I was not able to make nice long curls of apple, but it broke down very quickly. To prevent the apples to become brown I immediately let them drop into some water with lemon juice. It will take quite some time to peal all the apples, so be aware of that! For my tart I have used about 8 medium sized apples. Make some more, just to have opportunity to choose from the different sizes of apple slices! Finally after all the pealing start to assemble the roses of apples on top of the frangipane tart. In the beginning I mentioned that I was kind of worried because I had not many long nice stripes of apple, but actually it didn’t matter that much, as you can also take the smaller pieces and just layer them to create a rose! It will take some more time of course, but you won’t see the difference in the end 😉 Bake it for about half an hour and let it rest. When cooled completely you can sprinkle some cinnamon and/or some brown sugar on top if you like 🙂

What I have learned:

  • Try to work quickly with the peeling of the apples, as too long in the lemony water bath will actually extract some of the apple flavor!
  • When your pastry dough is too crumbly, just add a 1/2 -1 tablespoon of sour cream! It really worked like a charm and the dough turned out fantastic!
